garden goodness

Thanks to my dad's and adam's hard work in may, our garden is a bounty of delicious vegetables and fruit right now... Any ideas for what to do with a ton of tomatoes and zucchini???

My personal all-time summer favorite of deliciousness . . . quarter your tomatoes and toss with chunks of FRESH mozzerella, a TON of fresh basill, drizzle with olive oil, salt and pepper.....

I am a big fan of chocolate zucchini cake and a new fav is squash enchiladas. Too bad you live 9 hours away, or I would "help" you eat all that fresh produce. Do you want the recipes?

I wish you lived closer too- we'd love to share our bounty! :) And, yep, I'd absolutely love those recipes!

so I know this is a bit late, but you should stew some of those tomatoes and use them instead of a can of tomatoes in the fresh salsa recipe I gave you. Seriously it makes the salsa amazing!

jord, I was looking up stewing directions today! I haven't tried it yet, but I'll let you know how it goes. :)
